The Chef de Partie – Bakery leads the bakery section and produces high-quality breads, pastries, viennoiserie and baked goods to five-star standards for breakfast, restaurants, banquets and in-room dining. Key responsibilities include preparing daily production to recipes and presentation standards, planning mise en place, and making sure every item is fresh, consistent and attractively presented. The Chef de Partie supervises and trains commis and junior staff in the section, controls food cost, portioning and waste, and manages stock rotation and ordering of bakery ingredients. The role also requires strict compliance with food hygiene and safety standards (HACCP), keeping the work area and equipment clean, and contributing creative ideas for new bakery items and seasonal menus in support of the Pastry Chef and Executive Chef.
